STARTERS
pavé of salmon with a curried potato terrine,
pea purée and a caper jus
glazed crottin goats cheese, rocket salad, chargrilled asparagus,
confit vine cherry tomatoes and balsamic vinegar
seared scallops, creamed cauliflower, Bok choi, Pierre de Bleu mushroom,
with baby leeks and a hazelnut emulsion
pressed terrine of quail and rabbit with wild mushrooms and parsley,
truffled quail egg and Jerusalem artichoke
pan fried tuna with confit beetroot
and a spring onion and tomato salsa
for those who prefer something a little simpler,
we regularly smoke our own salmon here at Congham Hall
MAIN COURSES
roast rib eye of beef with a pomme puree,
creamed wild mushrooms and a green peppercorn jus
wild sea bass spiked with lemon grass, new potatoes,
wilted spinach and tomato, with sugar snaps and
a mussel and chive chowder
roast breast of Gressingham duck with pomme saladaise,
celeriac mousse and a thyme jus
darne of halibut pan roasted with a panache of seasonal vegetables,
noissette potatoes and beurre meuniére
roast chump of lamb, confit potatoes, sautéed kidney with parsley
and shallot, salsify and its own lamb jus dressing
each of our main courses are accompanied by vegetables as described
we are happy to provide a side dish of vegetables on request
DESSERTS
pear William tart tatin with spiced rum ice cream

cassis parfait with nutmeg mascarpone
and agen prunes steeped in Armagnac
hot chocolate fondant with fig ice cream
